  • ABOUT Paul Kahan

    Paul Kahan is the executive chef and partner of Blackbird, avec, and The Publican. In 1999, shortly after Blackbird opened, Food & Wine placed Kahan on their Best New Chefs list, recognizing his highly individual approach to cooking and the talent that Chicago diners have celebrated for years. Since then, he has been honored as winner of the James Beard Best Chef of the Midwest in 2004 and selection as a James Beard nominee for Outstanding Chef in 2007.

    Mindy Segal is the owner of Hot Chocolate, a popular restaurant in Chicago. She trained as a pastry chef at Chicago’s Kendall College and has worked with award winning chefs at Spago, Gordon, and Charlie Trotter’s. Segal's awards include the Jean Banchet award for Best Celebrity pastry chef in Chicago, Chicago Magazine’s pastry chef of the year and the James Beard Foundation 2007 nomination for outstanding pastry chef in the country.

    Alpana Singh is director of Wine and Spirits for Lettuce Entertain You Enterprises, Inc. She is also the host of the popular restaurant review television show, Check, Please! which airs weekly on WTTW Channel 11. Her past accolades include Best Sommelier in America by Wine and Spirits Magazine, Crain’s 40 under 40, Food and Wine Magazines 35 Under 35, Best Sommelier Chicago Magazine 2004, and a 2002 James Beard Foundation Nomination for Wine Service.
